Meal Prep Turkey Bacon Gouda Egg Breakfast Sandwiches!



Breakfast is often considered the most important meal of the day. In our busy lives its so easy to just get up, get ready for school or work and just decide to skip this important part of out day. Personally, thats what seemed to happen in our house and thats why we decided to start meal prepping ahead of time. Of course, if you don't like English muffins then you can do burritos as well! And you can add whatever vegetables that you like. We will often take some mushrooms, peppers, and onions and saute them in a little olive oil and cook them right into the egg patties. If you are going to add vegetables I find its best to saute them and get some of the moisture out otherwise later when you reheat the sandwich the vegetables will drop a lot of their water and make everything wet!

Ingredients:


English Muffins - We tried with toast 1 time but it was just a little to soggy when reheated. 
Eggs or egg whites
Gouda or cheese of your preference
Turkey Bacon

Directions For Bacon

Read package and cook your brand accordingly to whatever crispiness you prefer!

Directions :


1. Preheat an oiled/buttered skillet to about 3/10. White the pan heats, beat your eggs, beat'em good.. 
2. Pour enough egg on the bottom of the skillet to make an egg patty. Cover the skillet. The idea here is to slowly cook the egg all the way through without the need to flip it. If you found the sweet spot with your hot skillet this is possible, adjust your heat if needed since you will be making many sandwiches. 
3. While the egg is cooking, toast the english muffin.
4. When the english muffin is toasted, put cheese on muffin. 
5. Egg should be almost done after about 3-4 minutes. Place the egg on the cheesy muffin. (You can also make egg patties using a MICROWAVE EGG COOKER, if you prefer or if you are short on time.) Continue toasting the muffins and preparing the cheese while you make egg patties. When the bacon is done you can put your bacon on each sandwich.
6. DO NOT PLACE IN PLASTIC BAGS RIGHT AWAY OR YOU WILL HAVE SOGGY SANDWICHES! We made this mistake the first time we made these. If you put the sandwiches in plastic bags while they are still hot then they will keep throwing off moisture that will then accumulate on the inside of the bag and eventually make your bread soggy!
