Penne Pasta with Kale & Sun-Dried Tomatoes (Vegan Recipe)
Ingredients
- 1 cup, penne pasta
- 2 tablespoons, extra virgin olive oil
- 1/2 a bunch of lacinato kale, finely chopped
- handful of baby spinach
- 1 clove garlic, minced
- 1/4 cup oil-packed sun-dried tomatoes, drained & chopped
- 3/4 teaspoon, crushed red pepper flakes
- salt, to taste
Cook the penne per the instructions on the package.
Heat oil in a skillet over medium heat. Add the spinach, salt, kale, and garlic once heated. Cook stirring often for a couple of minutes.
Now add the sun dried tomatoes and red pepper flakes.
Drain the pasta and add the pasta to your vegetable mixture and stir well ensuring that all ingredients are mixed. Optional : Drizzle with some extra virgin olive oil and serve.
